Its no word of a lie that majority of us here on the Ellis farm love something sweet. In saying that Holleigh likes to keep most of her sweet treats on the healthy side. These biscuits are the perfect arvo snack to get you through when your craving that little sugar hit. Not only will it cvurb the cravings but its full of goodness too. High in omegas, protein and fibre to help you concentrate and feel full for longer.
1 1/3 multigrain flour or any flour
1 ½ cup of whole grain oats
¾ cup shredded coconut
¼ cup of HH Hemp Hearts
¼ cup chia seeds
½ dark chocolate chips
½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup of butter (room temperature)
1 cup of brown sugar or coconut sugar or honey
1 tsp vanilla bean extract
Preheat oven to 180 degrees celcius and line baking tray with baking paper
Mix together flour, oats, coconut, chia, HH hemp hearts, baking powder, baking soda, chocolate chips and salt in a bowl.
In another bowl beat butter until smooth. Add sugar and vanilla and beat until creamy. Add egg and combine well.
Gradually add flour mixture into butter mixture. The batter will be thick, make sure its well mixed together but do not over mix.
Scoop out cookies and roll to desired size. The cookies will grow when cooked so place them on baking tray about 3 inches apart.
Bake for around 10-15 minutes or until edges start to brown.
