Hemp and blueberry muffin recipe

Makes 12-18 muffins
1 1/2 cups flour
2 tsp baking powder
1/2 cup brown sugar
3/4 cup rolled oats
1/4 cup @harvesttohand hemp seeds
1/4 tsp salt
1/2 tsp cinnamon (optional)
1 egg
1 cup milk
1/4 unsalted butter
2 tsp vanilla essense
1 1/2 cups blueberries, frozen or fresh

Hemp Oat Topping:
1/2 cup brown sugar
1/4 cup @harvesttohand hemp seeds
1/4 cup rolled oats
1/4 cup melted butter

1. Preheat the oven to 180C. Grease a 12-hole muffin tin or line with baking paper or muffin liners.
2. In a large bowl, sift flour and baking powder. Add brown sugar, oats, hemp seeds, salt and cinnamon if using and mix.
3. In a seperate bowl whisk together milk, butter, eggs and vanilla. Add to the dry ingredients and stir until just combined.
4. Gently fold in the blueberries and spoon the batter into the muffin tin.
5. In a small bowl combine the hemp oat topping. Sprinkle onto of each muffin. Bake for 18-20 minutes until golden. Transfer to a wire rack to cool before serving.
